Green asparagus and strawberries with yogurt


Too cute, little vegetables! A gourmet creation by chef Alain Passard who invites you to share his passion for vegetables with your children.

Ingredients:

  • For 4 people :
  • 12 green asparagus
  • 8 beautiful strawberries
  • 1 bunch of chervil
  • 2 sprigs of garlic new
  • 2 sheep milk yogurts
  • some purple basil leaves
  • olive oil
  • flower of salt
  • mill pepper.

Preparation:

Peel the asparagus. Blanch them in boiling water for a few seconds, then immerse them in ice water to stop cooking and keep them crisp. Cut them in 4 in length. Wash the strawberries, cut them out (do this in order to keep them tasty!), Then cut them into quarters. Slice very thinly the new garlic sprigs. Arrange on the plate the quarters of asparagus and strawberries. Sprinkle with minced garlic, some chervil leaves and basil. Finish the seasoning by adding a drizzle of olive oil, a pinch of fleur de sel and a few rounds of pepper from the grinder. Add the contents of half a jar of yogurt per plate. Tip +: mixing fruits and vegetables in the same recipe is an idea to follow! The color scheme is also an asset to seduce the most hesitant: a touch of green, a touch of red and the plate becomes a gourmet palette that no one can resist.
