- For the biscuit
- 50 g of sugar
- 2 eggs
- 50 g flour
- 1 pinch of salt
- 2 tablespoons icing sugar
- For garnish
- 4 tablespoons jam
- 1 sheet of gelatin
Preheat the oven to 180 ° C
Separate whites from yellows. In a bowl, put the eggs in snow with half sugar. In a large bowl, beat the yolks with the remaining sugar.
Add a little whites to the yolks to relax the mixture, if the mixture is too thick you can add one or two tablespoons of milk. Then add the flour and finish to gently add the rest of the whites with a wooden spoon to not break them.
Pour the dough into molds (buttered, floured if necessary) and put in the oven for about 11 minutes.
2 minutes before the end, form a hollow on the top of the trays using a spoon, let the cooking finish. Unmould and let cool.
Meanwhile, heat the jam (if there are too big pieces mix it so that it is smoother). Add the gelatin in the jam and mix. Pour the jam into the hollows of the small trays and allow to cool again.
