Squares of lamb in crust and glazed vegetables

The early vegetables, a happiness! These are the very first of the season, obtained naturally and growing in principle in the field. Discover as a family with this recipe.


  • For 4 people :
  • 2 squares of lamb of 6 chops
  • 250 g candied tomatoes
  • 6 anchovies
  • 250 g onions
  • 500 g puff pastry
  • 1 C. honey coffee
  • 1 egg yolk.
  • For vegetables:
  • 400 g of new turnips
  • 400 g new carrots
  • 1 bunch of onions
  • 1 C. tablespoon of brown sugar
  • chervil
  • olive oil
  • salt
  • pepper.


Preheat the oven to 180 ° C (item 6). Peel and slice the onions. Simmer for 45 minutes covered with 2 anchovies and honey. Bone the lamb squares to get two fillets. Insert two anchovies in the middle of each lamb fillet. Brown them in a pan and let them cool. Spread the puff pastry in two rectangles. Arrange a lamb fillet on each, surrounded with onion compote and some candied tomatoes. Wrap the meat in the dough. To properly seal the dough, wet the fittings and pinch them. Brush with egg yolk. Bake for 40 minutes. Prepare the vegetables: Wash and scrape the carrots and turnips. Peel the onions. Melt the onions in a pan with a little olive oil. Add carrots and turnips and simmer covered for 15 minutes. Add the remaining candied tomatoes and sprinkle with brown sugar. Let confit 10 min. Add salt and pepper. Serve meat with glazed vegetables sprinkled with chopped chervil.
