Colombo of lamb

Head to India and the islands with this recipe of lamb colombo that will surprise your gourmands with its addition of raw apple. An exotic delight.


For 4 people

  • 600 g boneless lamb shoulder
  • 1 teaspoon of turmeric
  • 1 teaspoon of ginger
  • 1 teaspoon of curry
  • 1 teaspoon of cinnamon
  • 2 teaspoons chilli
  • 2 onions
  • 2 cloves garlic
  • 1 teaspoon of thyme
  • 3 bay leaves
  • 5 cl of rum
  • a cube of chicken broth
  • 1 apple
  • salt pepper
  • olive oil


Peel and finely slice the onions. Book. Cut the lamb into cubes. Make it come back in a little oil with the spices until they are golden brown.

Add the onions, crushed garlic cloves, thyme and bay leaves. When the onions begin to melt, add the rum and let evaporate.

Add 1/2 l of water and the bouillon cube. Bring to a boil, cover and simmer 45 min.

Add the apple peeled and cut into cubes 10 min before the end of cooking.
