Lenses are preferred during pregnancy. Rich in iron, essential to fight against anemia, they also contain omega 3 and vitamins B1 and B9 (folate). Here is a fresh recipe.
For 4 people :
- 2 small cucumbers
- 2 tomatoes
- 1 onion
- 1 clove of garlic
- 175 g of lentils
- 100 g walnuts
- 1 tablespoon chopped parsley
- 1 tablespoon of vinegar
- 4 tablespoons olive oil
- mill pepper
Peel the onion and cut it into cubes. Peel and chop the garlic. In a saucepan, sweat in a spoonful of oil for 5 minutes.
Add 35 cl of water and lentils. Boil and simmer for 30 minutes. Let cool.
Peel the cucumbers and cut them in half. Seed them and salt them. Let them disgorge for 30 minutes.
Bake, peel and crush the tomatoes.
In a salad bowl, emulsify the oil with the vinegar, salt and pepper. Chop the nuts and drain the lentils. Add them as well as tomatoes and parsley.
Garnish with cucumbers and serve chilled.
