Sole curry with pumpkin marbles

  • For 2 meals:
  • 400 g pumpkin.
  • 2 sole fillets
  • 10 cl of fresh cream
  • 2 tbsp. powdered curry
  • 1 knob of butter.
  • 1 sprig of coriander
  • salt
  • pepper.


With a Parisian apple spoon, detail the pumpkin flesh into balls. Cook them for 10 minutes in salted boiling water and drain. Roll the sole fillets and hold them with a wooden spike. Heat the butter in a pan and brown the sole fillets with the pumpkin marbles. Add the cream and curry and cook for 5 minutes. Season with salt and pepper and serve with the coriander sprig.
