Gigot From 7 Hours

This is the Easter recipe par excellence! Rather easy to achieve, it is the cooking time is long: 7 hours as the name suggests. But it's cooking on its own ... and it's awfully good.


  • 1 leg of lamb
  • 2 carrots
  • 2 onions
  • 2 tomatoes
  • 2 heads of garlic
  • 1 half bottle of dry white wine
  • 2 tbsp. honey
  • 1 C. soup mix of couscous spices
  • 150 g dried apricots
  • 60 g raisins
  • 200 g couscous semolina
  • coriander
  • salt
  • pepper.


The day before, preheat the oven to 150 ° C (item 5). Rub the leg with coarse salt. Peel the carrots and onions. Prepare the garlic in the shirt (separate the pods, but keep their last skin). Cut carrots and tomatoes into cubes. Slice the onions. Place them in the bottom of a casserole, then add the leg. Sprinkle with spices and pepper. Spread the honey on the meat. Surround with garlic cloves in shirt. Pour the white wine and fill with water to cover the meat. Bake the casserole with lid for 4 hours. Take out of the oven and let cool. The next day, degrease the dish and then bake it, always with the lid, for 3 additional hours. Half an hour before the end of cooking, add the dried fruits. The leg is preserved and its meat is easily peeled. Serve with the couscous semolina cooked according to package and sauce, sprinkled with chopped coriander.
